Grilled Watermelon Salad
Ingredients:
1/2 seedless watermelon
1/4 cub balsamic vinegar
Olive oil
2 cups baby chard
1 cup small mozzarella balls
Kosher salt
Fresh ground black pepper
Directions:
Remove rind from watermelon and cut into triangles.
Pour vinegar into saucepan and bring to a simmer over medium heat, until it has reduced to a thick syrup. Set aside.
Heat grill. Coat watermelon slices with olive oil and place on grill. Grill each side for about 2 minutes until grill marks appear. Transfer to plate and sprinkle with salt.
Wash and dry baby chard. Place into a serving dish, followed by watermelon slices and mozzarella balls. Drizzle with balsamic vinegar syrup and olive oil and dust with pepper. Serve and enjoy!
