Crab Cakes
Serves 4
Ingredients:
For the Crab cakes
1 egg
4 Tbsp mayonnaise
1/2 lemon, juiced
8 oz crabmeat
3 green onions, finely chopped
1/8 tsp cayenne pepper
1/4 tsp garlic powder
1/2 cup crushed buttery round crackers
1 tsp salt
1 tablespoon butter
For the Garlic Aioli
3/4 cup mayonnaise
3 cloves of garlic, minced
2 Tbsp lemon juice
2 Tbsp olive oil
3/4 tsp salt
1/2 tsp ground black pepper
Directions:
In a bowl, mash garlic and salt until it forms a paste. Whisk in remaining ingredients. Cover and refrigerate for at least 30 minutes.
In a large bowl, mix together egg, mayonnaise, lemon juice, cayenne pepper, green onions. Add crabmeat until thoroughly mixed together. Slowly add crushed crackers, until you reach the desired consistency. Form 4 patties using mixture and set aside.
Heat butter in a large skillet over medium-high heat. Place patties in skillet and cook until golden brown, about 5-6 minutes per side.
Serve warm with aioli.
