    Chili Cheese Fries

    French Fries
    2-3 Russet Potatoes
    3 Tbsp olive oil
    Salt & Pepper to taste

    Preheat oven to 450F. Using a mandolin or knife, slice potatoes into thin french fries. Toss fries with olive oil and place onto baking sheet. Sprinkle with salt and pepper to taste and bake until tender, about 25-35 minutes.

    1 lb ground beef, turkey or chicken
    1 yellow onion, diced
    1/2 green bell pepper, diced
    1 cup diced tomatoes
    1 Tbsp olive oil
    1 Tbsp chili powder (more or less depending on preference)
    1 tsp cumin
    1 tsp garlic powder
    1 tsp onion powder
    1/2 tsp coriander
    1/2 cup water
    Salt & Pepper to taste

    In a deep sauce pan, drizzle olive oil and brown ground beef. Add onions and pepper and saute until soft. Add tomatoes, spices, and water and mix thoroughly. Allow to simmer for 20-30 minutes, stirring every 5-10 minutes. Taste test and add salt and pepper as desired.

    Plating & Enjoying
    Place fries into an oven-safe dish. Pour chili on top, and sprinkle with cheese. Place into oven for 2-3 minutes, until cheese has melted. Top with fresh diced tomatoes, shredded cheddar or Mexican blend cheese, chopped green onions, diced onions, sour cream, jalapeƱo peppers, or anything else!
