    Broccoli & Salmon Quiche

    Serves 6

    Ingredients
    1 9” uncooked pie crust
    16 oz smoked salmon, broken into small chunks.
    2 cups fresh broccoli flowerlets, cut into small pieces
    1 cup milk
    1/4 cup thinly sliced shallots
    1/3 cup Parmesan cheese, shredded
    20 oz Ricotta cheese
    4 oz Mozzarella, shredded
    5 eggs, beaten

    Directions:
    Preheat oven to 350F.

    Spray 9” pie pan with cooking spray and line with pie crust. Set aside.

    In a bowl, mix eggs, milk, and cheeses together. Fold in broccoli and salmon. Pour into pie pan and sprinkle top with parmesan cheese. Bake for 1 hour, until crust and eggs are lightly brown and quiche is puffy in center. Allow to cool before serving.
