    Grilled Bacon Wrapped Peaches

    with a honey lemon balsamic glaze

    Prep time 10 minutes | Serves: 4-6

    Ingredients:
    4 large Peaches (6 plums) stone removed cut into 6-8 pieces
    12 ounces Bacon (Prosciutto)
    40 large Basil leaves,
    Olive oil
    ¼ cup Balsamic glaze, store-bought
    ½ Lemon juice
    2 Tbsp. honey

    Directions:
    Set a grill to low heat and preheat for 10 minutes or so, brush the grill grates with a paper towel dabbed in oil.

    Wash and dry peaches/plums. Cut each peach/plum in half and then each half into 4 quarters. Place a large basil leaf on one side of the peach/plum. Cut the bacon/prosciutto slices in half. Wrap each peach/plum slice and basil leaves with a slice of bacon/ prosciutto. Pin the loose end of the bacon/ prosciutto slice with a toothpick. Repeat with remaining peaches/ plums.

    Brush the bacon/ prosciutto wrapped peaches/plums lightly with olive oil so the bacon/prosciutto doesn't stick to the grill. Grill the peaches/plums until the bacon/ prosciutto is cooked, turning so all sides are evenly cooked, about 20 minutes. While waiting for those to cook combine in a small bowl the balsamic glaze, lemon juice, and honey; once combined set aside.

    Transfer to a serving platter and remove toothpicks. Drizzle honey lemon balsamic glaze.
    Serve hot or at room temperature.

    Additional serving option:
    This appetizer can easily be turned into the first course of a dinner party or a nice summer salad for those hot days. Just by adding a few ingredients.

    Ingredients:
    2 cups Arugula/Spinach mix
    ½ cup Chopped Pecans
    1 cup shaved Parmesan
    2-3 Tbsp. Olive oil
    Season to taste with salt and fresh cracked pepper

    Directions:
    In a large mixing bowl combine arugula and spinach toss with olive oil and salt and pepper place on plate and top with the bacon/prosciutto wrapped grilled peaches/ plums then top with a drizzling of the balsamic glaze and the shaved parmesan. Then serve to your guests and enjoy.
